Ingredients list forthe Olive, Bacon, and Cheese Bread

  • 5 fl oz (15cl) of white wine
  • 3 1/3 fl oz (10cl) olive oil
  • 4 eggs
  • 1/2 teaspoon salt
  • 2 1/2 cup (250g) all-purpose flour
  • 1 teaspoon of baking powder (about 5g)
  • 5 ounces (150g) grated swiss cheese or cheddar
  • 1 large onion
  • 3 1/2 ounces (100g) of bacon
  • 7 ounces (200g) city ham, already cooked — sold as “ready to serve”. Still, on the bone, it’s better! If you don’t want to bring back the whole ham at home, ask your butcher to slice it off for you.
  • 3 1/2 ounces (100g) black olives
  • 3 1/2 ounces (100g) green olives
  • 2 tablespoons chopped parsley

Directions

1. In a large bowl, whisk together the wine, oil, eggs, and salt.

2. Separately, mix the flour and baking powder, sift and stir into the liquid preparation.

3. Chop the onion finely and sauté in a skillet with bacon for a few minutes until the onion is translucent and the bacon is cooked. Drain and place on a paper towel to absorb any cooking fat. Set aside.

4. Slice the olives and parsley and cut the ham.

5. Add all ingredients and grated cheese to the basic preparation and mix.

6. Pour into a buttered loaf pan, 9 by 5 inches.

7. Bake in the oven for 1 hour at 360°F (180°C).

    I make this quite often, at least once a month. Its a very forgiving recipe, I mostly swap the onion for spring onion, often swap the grated cheese for feta, add whatever fresh herbs I have and sometimes leave out the bacon. I always swap half the flour for a mix of oats and ground flax and add pumpkin seeds to make it mildly healthier. A delicious summer picnic version is to use sundried tomatoes, goats cheese and basil. Always goes well with my home made veggie patè.

    This is a great recipe! I made this to put out with appetizers for a holiday party. Also had a piece the next day for breakfast.

    I made the recipe once exactly as written and it was perfect. I found the measurements fairly complicated (had to pull out a kitchen scale as I'm accustomed to baking measured in cups and table/teaspoons, not grams and ounces). I've made it twice since then, once with half the cheddar subbed for feta (since that's what I had on hand), and it came out extremely crumbly so I couldn't slice the bread without breaking. Another time I used beer in place of wine (I've seen lots of similar beer and cheese quickbread recipes) and it worked fine except it was extremely salty, so be careful to check the meats before adding them and decrease or omit the salt if needed. I would love to do an egg-free version to accommodate family allergies, but this recipe has proven it's not to be tinkered with!

    It was delicious. I added twice as many olives and half as much bacon and I felt the flavour was still great without the artery clogging greasiness of too much bacon. The salt will kill more too but what the hay!?!?

    I followed the instructions and the bread came out just right. I haven't seen anywhere if it needs to be refrigerated after cooling?

    I like it, but something is missing. I can’t think what to add to it after its baked to fix it. Although next time I will add Italian seasoning, sautéed garlic, mushrooms, sausage, and skip the olives (they didn’t bring anything to the party). Maybe Parmesan mixed in or sprinkle on top.

    I made the bread yesterday and it is absolutely delicious and is like a mini-meal. I’m sitting here on my lunch break wishing I’d brought another slice.I’ve made a version before and it was good but this is superior. Possibly due to the wine.

    I think this bread is so tasty, I really like it. I only put about half of the ham. I was afraid it might rise too much but it did not. I love olives, bacon and onions so this is just awesome. I think it will be a great breakfast bread.

    Delicious. I changed it to suit me and my preferred eating habits, Low carb. I didn't use the wine or ham or green olives, did use black olives though. Plus I replaced flour with almond meal. Turned out perfect. Ate some about 30 minutes after cooking it with butter. This morning I toasted a couple of slices for breakfast . This is going to be my new go to bread recipe. Thanks

    Hi! Glad you liked it!Yes, the intended texture is quite dense/compact and moist... The 4 eggs act like a shortening so it's quite normal that the dough doesn't rise that much in the oven. And to answer your last question, no there is no resting required before baking. However it's better to let it cool a bit before serving. Best regards!

    I have to ask - when you made this bread was it quite thick? I made sure to thoroughly drain the oils and liquids from my ingredients with paper towels to suck it all up - but when I sliced up the bread it was still sort of.. thick, very moist and not incredibly "bready". Is this how you intended the recipe to end up? it tasted amazing, I just wasn't sure if I had done something wrong or maybe you had let yours rise outside the oven for awhile maybe.

    Confusing instructions--STEP 2 calls for baking powder, but INGREDIENTS calls for yeast.
