Real tortillas are very far from keto.

They are usually filled with regular flour like corn tortillas or wheat flour tortillas, which are high in carbs.

From now on, you can have the perfect keto tortilla every day by using 3 ingredients only. And that is what todays go-to recipe is all about.

Keto tortillas are tortillas made with one of the flour replacements in our lifestyle. You find recipes with various keto flour such as almond meal, coconut flour, blanched almond flour, sunflower seed flour, and much more.

You can even find cauliflower tortillas, which I have to try myself.

They all contain much fewer carbs than regular tortillas, and it is only up to you which flavors you prefer.

How many carbs are in a keto tortilla?

One tortilla contains 0 carbs and 11 grams of fiber. To count it all together, you get into minus net carb per tortilla if that ever exists.

Best keto tortilla recipe – 3 ingredients only

This specific tortilla recipe was developed by me, precisely four enchilada casserole. I had the recipe already in my head since I made first-time keto pizza using fathead dough.

And as oat fiber has become one of my most favorable flour in cooking and baking, I had to make tortillas with it.

I do regret I should have made it a long time ago. Those tortillas are so pliable, soft, and great for wraps that you will have them in your freezer from now on.

What ingredients are in low carb tortillas?

Would you ever believe that those great tortillas are made of only 3 ingredients? You can even have one ingredient, flaxseed wrap, but that is another story.

In this recipe, all you need is oat fiber as a replacement for flour, eggs to hold it all together, and cheese to give you the pliability, fat and all the flavors.

Ideas for keto wraps

Keto wraps are a great way to enjoy a low-carb meal. There are many different ideas for keto wraps that can be made at home. One of the simplest and most popular options is to use lettuce leaves as the wrap instead of a traditional tortilla or flatbread.

The lettuce leaves provide an excellent crunchy texture and can easily be filled with your favorite vegetables, proteins, and sauces.

Another option is to use cheese slices as a wrap – simply place the ingredients between two slices of cheese and heat until melted. For a more creative twist, you can use roasted vegetables such as peppers, zucchini, and eggplant as the wrap itself – just fill them up with your favorite ingredients and enjoy.

How to make low-carb tortillas?

Let us start with our fantastic recipe to have you on a low carb diet still. Enjoy these low carb tortillas with your family and friends. Total measurements are written in the recipe card below.

Kitchen gadgets needed:

  • Cooking pot
  • Silicone rolling sheet
  • Rolling pin
  • Round shape bowl
  • Baking tray
  • Parchment paper

Ingredients needed:

  • Mozzarella
  • Eggs
  • Oat fiber

STEP-BY-STEP INSTRUCTIONS FOR MAKING KETO-FRIENDLY TORTILLAS

First step: Prepare ingredients

Prepare your ingredients to make amazing keto and gluten-free tortillas. That is oat fiber, eggs, and mozzarella.

Regarding the cheese, it is best to use a whole block of mozzarella and shred it yourselves at home. In that way, you have no additional starches, generally in the pre-shredded store-bought packets.

Second step: Heat up mozzarella

On your stove, heat up to mozzarella on medium heat. Using a wooden spoon, gently stir from time to time for all of the cheese to melt. Keep heating up until you have a smooth melted cheese.

Third step: Add oat fiber and eggs

Switch the heat off and add oat fiber. Blend it in.

Add eggs and mix thoroughly. Keep mixing until you get a combined uniformed smooth dough. If you feel mozzarella needs to be melted again, switch the heat on low and keep blending.

Fourth step: Work out the dough

Once you have the dough similar to my in the video, place it all on a silicone rolling sheet and using your hands keep working the dough.

As you see on the video, I stretch and fold the dough several times. Keep stretching and folding until you get a really smooth consistency. The process might take somewhere between 5 to 8 minutes.

Fifth step: Shape tortillas

Once you are happy with the consistency, split your dough into 8 pieces. That is how many I managed to make. If you want to make smaller or larger tortillas, decide on the amount.

Using a roller, roll one piece into a round flat sheet. Shape your tortillas using either a round, sharp bowl or anything similar.

Place each wrap onto a baking sheet covered with parchment paper.

At this time, you can heat the oven to 350 Fahrenheit or 180 Celsius.

Once you have all the tortillas ready, place them into a preheated oven and bake the tortillas for 8 to 10 minutes until you see the edges starting to brown. I managed to fit 4 tortillas on each baking sheet.

Once you make the tortillas, to keep them soft, it is best to wrap them in aluminum foil or parchment paper immediately when they are taken out of the oven.

Tips for the best low carb tortilla recipe

  • Tortilla press – even though I have not tried it, you can use a tortilla press to make and shape tortillas. Make sure you place the tortilla dough between parchment paper or wax paper, so it does not stick onto the surface of tortilla press.
  • Food processor – I have seen some people using a food processor to mix cheese with flour before heating it. I have not tried it personally, but please do if you feel like experimenting.
  • Wrap – once you make these tortillas, it is best to wrap them immediately in parchment paper or aluminum foil. Otherwise, tortillas would dry fast.
  • Make tortilla chips – cutting them into triangles and letting them bake a bit longer would give you perfect crunchy keto tortilla chips.

What to serve with gluten free tortillas?

Our tortillas are sturdy enough to hold any amount of filling. Gluten-free, as well as paleo tortillas, make an excellent base for any meal. If you want to serve something light, try pairing the tortillas with grilled vegetables or some fresh salad.

Coconut flour, compared to the other nut flours, is very dry. It is much more absorbent than almond flour. Therefore, if you use it in any recipe, a 1/4 amount is more than enough. You can replace oat fiber with coconut flour here, but add only half of the amount.

I have not tried this recipe with coconut flour and am worried it will be dry, and the tortillas may need a bit more moisture. I would also add a pinch of xanthan gum and psyllium husk to soften the dough.

How do you make almond flour tortillas?

Following the same steps, you can replace oat fiber with almond flour one to one.

How to store low carb tortillas?

Low carb tortillas are an excellent and nutritious alternative to traditional high-carb bread, but they must be stored properly to maintain their freshness.

Tortillas can be stored in the fridge or a freezer.

To store them, wrap each tortilla in a clean paper towel or plastic wrap before placing it in an airtight container. The container should be kept in a refrigerator.

Warm the tortillas in a skillet or oven for best results when ready to use. If you find them too dry, using a wet hand, layer some moisture before heating them.

Be sure to consume the tortillas within three days for optimal flavor and quality.

If not used it within this time, freeze leftover tortillas for later use.

With careful storage and preparation, low carb tortillas can bring delicious flavors to your meals for weeks.

Can you freeze homemade tortillas?

Yes, you can freeze homemade tortillas. The best way to do this is to wrap them tightly in plastic or place them in a freezer-safe bag. When you are ready to use these tortillas, take them out of the freezer and let them thaw at room temperature or in the refrigerator.
To reheat the tortillas, heat them in a skillet on medium heat for about 30 seconds on each side.
Homemade tortillas will last 3 months in the freezer and stay fresh when properly sealed and frozen. With this method, you can enjoy delicious homemade tortillas whenever you’d like.
